Consumer drip machines use boiler tubes, high end espresso machines have pumps. Given the number of drip machines vs espresso machines I gotta say it is.
Of course, I am being pedantic. Give me specific context and I will admit you are correct.

See if you can get a plastic bushing for the hole that the wires go through there, especially if that plate is metal.

You have no ground conductor there, but but since it is outside, you'll need a weatherproof enclosure and a GFI receptacle anyway.
GFI will take care of the grounding issue.

Cold water to a boiler. When you do the coffee shot, there's a variation of the restriction. The goal is also to push with higher pressure initially (preinfusion), then lower during the infusion.

What you are doing is fine. You'll want to get that broken screw out of the bottom mounting tab on the original box.

Really what you're trying to do is vary the motor speed and torque, not so much the current.
At that point, the best way to do this is with a VFD (though you'll need a rated motor). Variable Frequency Drives are sometimes called Variable Speed Drives for just that reason.

You can probably find a heavy walled steel pipe that would do the trick. Anything 8” diameter or bigger would work

That would be perfect, but so far I’ve whiffed on finding one. Gonna look into a few of the sourcing suggestion that others made though. I even have a huge lumber yard near me that said ‘we do not have that product’ when I asked for the 12” pole. Not sure I believe that.

We evaluated using current to control pressure in automotive fuel systems. The only thing I recall was with constant current the pump pressure would vary a significant amount. It's been too long to recall what the cause of the variation was/were.

Depends on how static the other variables are. Hint they probably aren't or others wouldn't be using pressure control.
Also please explain how you intend modulate the current? Most speed controllers adjust voltage, frequency or resistance which do change the current but it isnt a direct correlation the load on the motor at a given speed changes the current.

My chosen system has a spring break. What is stronger I wonder: 4 to 6 ea of 2x12s thin side facing the termination point with the line wrapped around them like in the video another guy posted here, or two 6x6s in line with the line through them. Hmm

If you go to a professional lumber yard you can get larger beams, how about just 2 6x6 stacked in line with the cable? Guy wire to rear from top and brace in front with a small launch platform. Instead of wrapping the cable, drill a hole and terminate the cable on the uphill side. How are you going to avoid hitting the tree at the bottom?

He doesn't even have to do that. The top hinge hook is a threaded rod with a 90 angle. Just replace it with a longer threaded rod. Take measurements and Google threaded hinge pin.

There’s probably no starter bars holding the column down to the footing and you’ll just push the bottom row of bricks off its foundation. Or it will seperate at a row of bricks.
