Probably around 1000 to 1200 if you built it yourself, a few hundred more for a pre made one, if you were willing to find pre owned parts like 750-900 instead, then any cheap peripheral will work, an existing one you already have is free obviously. then over time you'd make up the difference by not paying for online and cheaper games, over the cost of 7 years (about how long it takes until new console) youd save about 700 dollars alone in just a subscription to play online, over the past 2 years youd have saved around 1500-2000 in free games from epic games, then ofcourse games being cheaper brings that down even more. Then after all those savings you get all the benefits i listed in my other comment, the only downsideds are entry cost and possible finding it hard to get up and running i suppose but id say the benefits outweigh the negatives hugely. From personal experience ive turned a few tech illiterate console friends into PC users and they all tell me it just isnt as hard as theyve been told, I also think using a PC is just so useful in general for day to day life and not knowing how to use one until you have to later at a job or something is probably annoying haha, hope this helps and if you are personally looking for recommendations ill give my two cents

You can technically do two players on one switch, but it isn't split screen, and it's far from ideal. I would personally either have them take turns, or get a second switch. Just my recommendation though, it might work to have them both play at once. I just don't think that method of play is necessarily great.

I'd recommend Mario Party Superstars and NOT Super Mario Party. Super Mario party is one of the worst Mario party games I've ever played

While you can 'technically' play Animal Crossing with two players on one screen, it's not the greatest. The game does not lend itself well to two players on playing on one screen. I would recommend either getting a second Switch to play that, or letting them take turns playing. You can have multiple players on one "island", so taking turns actually could work well, if your kids are okay with that, that is.

Animal crossing is single player. And I think you can only have one island per game.

Yes, two player splitscreen is possible in Minecraft. And while the performance on switch is the greatest (I've personally switched to playing Minecraft on Xbox), for young kids playing the game, it's perfectly fine for casual play.

You can play animal crossing multiplayer on one screen, but i've tried it, and you're better off playing single player because the multiplayer just doesn't work.

100% recommend Yoshi's Crafted World would be a hit and it has 2player mode. It also has a mellow mode that helps the player if they need it. Get it!

yep this is partly what i meant when i stated ideoligical reasons, everyone needs to use a computer so why not start now?, i also kind of think this is a bad reason to give to console players imo, it might make them think that gaming on a PC is like doing word or something like that.
