The brown sauce is ketchup, Worcestershire sauce, golden raisins, and freshly-squeezed orange juice. The other one is olive oil, garlic, brandy, double cream, whole grain mustard and cremini mushrooms. The dip is cilantro, garlic, toasted sesame oil, rice vinegar and soy sauce.

According to my Google machine, a porterhouse is a min on 1.25 " from bone to widest point of the tenderloin side of the T bone. All porterhouses are T bone steaks, but not all T bones are porterhouses

There are many types and variations of Paella depending on the type (senyoret for example has seafood) and the location where you order it. In the capital, Paella Valenciana has Garrofon, Baxoqueta, rabbit, snails and more. If you go to the south (meaning Alicante, not Andalusia), you can see it made with red Pepper which would be a crime in Valencia. However, it's never made with sausage.
That said, you enjoy your rice however you want. Spain loves it's food and we just love discussing it

What I know is that they are very similar. The only difference is a porterhouse is bigger in size than a t-bone.
