Mostly mandolin! I have a hard time with the eggplant and tomatoes on the mandolin, so I do those by hand.

Thank you! The taste mostly comes from the sauce, which is sweet and garlic-y and umami. The texture, hmm, it's pretty collagen-y, like eating that top part of a drumstick

yeah the bread is there to be eaten with any appetizers like caprese, salads, beef tartare, carpaccio or whatever. not with the pasta.
