Sure! Recipe below is for one casserole in a 9 by 13 dish. Double for two. Feel free to add/remove secondary ingredients.
Main ingredients:
-
1 package hashbrowns (thawed if frozen). Remove excess moisture by patting with paper towel. Empty package into bottom of dish. Season (garlic blend works good here).
-
1/4 cup butter, melted. Drizzle on top of hashbrowns that are in dish. Bake for 15-20 minutes on 425 until edges of hashbrowns turn brown. Then remove from heat. (Some pieces will brown quicker than others. I wouldn't remove until half of the bottom edges are browned.)
In bowl, add (all of the below):
-
8-10 eggs
-
1 cup heavy whipping cream (add more if needed. Especially when you have multiplie protein/veggies into the mix)
-
2 to 3 cups of cheese (I recommend 2-1/4 Cups sharp cheddar, 3/4 cup Trader Joe’s Quattro Formaggi)
Secondary ingredients:
-
1 pound of Jimmy Dean sausage (season and cook this completely in skillet, then add to mixing bowl)
-
Finely diced half of one onion
-
Half a package of mushrooms (semi-cook these in a skillet, then add to mixing bowl). You want them cooked up just a bit, but not too much.

1 cup of ham (preferably ham from Honey Baked ham company)
-
Seasoning to taste.

Mix all ingredients in mixing bowl, then pour into dish.

Cook on 375 for 30-35 minutes, or until knife/ toothpick inserted in center/ corners comes out clean and corners are a nice brown (as shown in picture). Do not worry if you have yours in the oven for 45, as long as it looks like the picture you are good! :).
