I tried this method to the letter, didn't turn out nearly as good as his. Unless he dried it beforehand, I'm not sure how he got such a beautiful crackling.

The recipe is very simple: chocolate melted in hot milk. Just stir until they are evenly mixed.

It's pro/chef not pro-chef. The / means and/or

There’s for sure a similarity in taste but I’d argue it’s kinda a cross between a cheeseburger and a Philly cheesesteak. The chop and cheese being mixed into the chopped meat changes the texture and how it tastes to my mind.
Also gotta remember this is something you get for dirt cheap and is there for you on a drunken walk home after the bars or a quick bite before catching a bus. It’s the cost and availability that makes it famous here.

I’m with you, I would way rather have it underdone than overcooked. When you sear it in the pan it’s pretty hard to overlook though (in my experience at least)

Can’t say I’ve ever tried a sauce like that but I’m always open for trying new things. Appreciate the suggestion and I’ll give it a go!

The salmon cooled down for about 5 - 8 mins but it was still hot when I was eating it. The crispness of the salmon helped a lot but next time I’m going to make sure the veggies are a little more crisp as well. It still tasted really good but a few tweaks would make it that much better

I had this dish at a restaurant in Amsterdam once! They also served beer made from fermented coconut water. It was litterally one of the best meals I ever had in my entire life. I believe this dish is traditionally served with an orange spiced stew made from chickpea flour. The name escapes me, but I think it starts with a J and sounds more like a japanese word than what I would associate with etheipian, but Who am I to say, I speak neither of those languages 😋.

Unless it is overcooked! I only like salmon if it’s raw (sushi grade) or perfectly cooked. I despise well done salmon

I once had a dish like this at a restaurant. It was room temperature, the low heat and sogginess made it taste bad. I hope your version was served hot, maybe even still sizzling.

Do you want a simple recipe of galette ? Here you have it : ham and cheese galette You need : a froment galette, a pan the size of your galette, another pan, a slice of ham, shredded cheese and an egg Step one : in the small pan, fry an egg (the yolk should be still liquid) Step two : while your egg is cooking, in the large pan, throw your galette with half of the cheese, the ham and the other half of the cheese Step three : put your egg on the galette Step four : fold your galette like a little present 🎁 :) Step five : salt pepper and some chive on the yolk NB : once you threw your galette in the pan you need to go the fastest as possible or your galette will break instead of fold so cook your egg before the galette Then enjoy 😉

I don't know where you're located but any Ethiopian restaurant near you will have it in abundance. Or you can ask op for their recipe.
I've never made it, but will try now!

I'm not sure really, I got it from a cafe in spain. My guess is they mix heavy cream with it and made it with actual melted chocolate.
