Yukon is better as far as I understand. I have used russet potatoes since they are cheaper, and it tasted fine.

Freezing cheese is not advised it can wreck the structure if it's a moist variety.

Season it while it's in the pan usually works for me. Always salt and pepper :)

You say that like it’s a bad thing? But the hoagie roll is different than a burger bun. Easier to wrap and eat on the go too. Chopped cheeses are amazing.

You can play around with the amount of mozzarella and pasta water to get the silky texture you prefer.
