Yeah the filling is folded up inside of the crepe but since it’s a a circle folded into a rectangle you have a gap in the middle.

Haha I more than likely will not buy iceberg cause we won’t use it, but when I want that vibe for sandwiches/burgers I use the bottom part of Romaine hearts that are kinda pale yellow. Not the same but gets the job done

I made a sauce with them using sugar, cornstarch, lemon juice, vanilla and a little bit of water. Brought to a boil and then simmered for around 3-5 mins.
