Sounds tasty, sure, but there's nothing 'pro' about this.
If you use the [pro/chef] option it better be 🔥 bc you're going to be judged a little harsher as opposed to [homemade]

I generally don’t go for as juicy as you have made it. A bit less liquid would be my tip, as well as thinner slices as another user suggested. When you have thinner vegetables, you won’t need as much liquid to fully cook it.

Have you ever had a birria taco and been upset that hipsters mainstreamed it though?

I just saw someone make a 2-3 foot wrap. Finished off on the grill with a bacon wrap on the outside for flavor crunch. It's not event close or appealing

All of the stuff is sauteed together gradually, starting with onions, then beans, then potatoes then spinach. After that is when I started adding liquid, and brought it to a summer for a couple of hours. Spices were added throughout according to my own taste, and I don't really measure ingredients because I typically am winging every recipe I make. Let me know if you have any more questions! Also I remember adding a couple pats of butter.
