I'm sicilian myself (living in Mazara del Vallo and studying in Palermo) and I make arancine with my mom quite often. I can assure you that the batter is the traditional way.
As of the difference between batter and egg, I can't really tell because we always use batter. Probably it lacks of that eggy flavour, which is good since you don't want that.

I wanted to point out a thing of GialloZafferano's recipe. They use caciocavallo cheese both for rice and ragù filling. It's a very specific cheese from south Italy and it could be hard to find outside. You can switch that with regular parmesan-like cheese for rice and mozzarella for fillings.
Also there are just two different fillings in that recipe, but you can use whatever ingredient you like. Popular ones are: speck and fontina/provola, spinach bacon and mozzarella, eggplants tomato sauce and pecorino, salmon and besciamella.
You can even go more gourmet if you like with fancy combinations.

I love fudge in this style. It sounds tasty, but perhaps a bit overwhelmed by the salt if there's no added sugar. For most people's tastes anyway. I love me a salted chocolate 🤤

Ingredients

400g Sweetened condensed milk (1can)

450g Chocolate (250g Semi-sweet / 200g bittersweet)

1/4 tsp Salt

Sea Salt ( Optional )

Instructions

Step 1 Preparing The Mold

  1. Grease an 8inch square mold
  2. Line with parchment paper
  3. Set aside for later

Step 2 The Fudge

  1. Melt in a water bath the chocolate
  2. Add Salt
  3. Take off the heat
  4. Heat the Condensed milk for a minute in the microwave
  5. Add the Condensed milk to the melted chocolate
  6. Mix until it is mixed and stop mixing
  7. Transfer into your prepared pan
  8. Flatten it out
  9. Sprinkle Sea Salt on top for the best tasting result
  10. Let it set 1h-2h in the refrigerator
  11. Take off the mold
  12. Cut nice squares
  13. Enjoy!

Ingredients  

  • 2 1/2 cups sweet corn (boiled)
  • 1/2 cup coconut milk/cream
  • 2 cups glutinous rice flour (needs to be glutinous, not regular rice flour)
  • 2 eggs
  • 3/4 cup sugar
  • 1/4 cup melted butter
  • 1 tsp vanilla essence
  • 1/2 tsp salt
  • 1 tsp baking powder  

Blend the corn and coconut cream until smooth. Then add the melted butter, sugar, eggs and vanilla essence and blend again. Add in the dry ingredients and combine everything very well. Pour the mixture into a baking tray (mine was 10”x10”) and bake at 350 °F for about 60 minutes or until the top becomes light brown in color. Allow it to cool down before cutting it.   You’ll love this if you’re a fan of mochi!

If you Google Medovik there are some good recipes. I made with my partner once - but apparently Russia doesn't have the concept of salted butter, so she bought that by mistake.... It was not great
