These chanterelles could be either I got them from a farmers market and didn’t ask about the origin. The oyster mushroom are without a doubt farmed! I’ve been thinking about expanding too chanterelles myself but I don’t think I’m at that skill level yet.

I’m fully aware waygu can and probably should be eaten raw or damn near raw. Carpaccio done exactly the way OP posted is a tired 80’s cliche dish that sucks and can be found at dated restaurants worldwide, likely packed full of octogenarians in diapers. It is absolutely criminal to eat waygu of any grade with that amount of cheese and aioli. Has nothing to do with being raw. The marbling here also sucks so it is low grade waygu at best, if not a bait and switch, and definitely nothing to be posting internet flex pics about

You can also use chickpeas, carrot sticks, almonds, beans and brussel sprouts. I have one of those airfryers with two shelves. In the beginning I pretty much only used it for fries and chicken but now I hardly ever use my normal oven except for bread.
