We don't have it here, and i dont know what it is. Maybe its called in your region like this. Im italian who lives in Belgium. Can't tell you wat difference it is.

Interesting! Thank you for the food history lesson.
A quick Google tells me that bologna is essentially mortadella except for the detail that the fat chunks are blended into bologna. Is there any other big differences?

Mortadella is original from Bologna. Google it. Bologna is a city, which is famous for his ragu (Bolognese sauce called outside of italy) and mortadella. With an italian sandwich it is lovely. Thats why your sandwich has no ingredients that come from that region . Is the same if you call a hotdog a hamburger.

Wash and cook your short grained rice as you normally do (usually 1 to 1 water ratio and about 15 minutes if on the stove top) then let sit covered off the heat for 10 minutes. Dissolve 2 tablespoons sugar and 1 teaspoon salt into 1/3 cup rice vinegar (this is for 2 cups of rice btw). Fluff your rice with a wooden or plastic paddle, and slowly pour the seasoned vinegar mixture over the rice, constantly fluffing and folding as you go. That’s sushi rice.

You should fry them fairly long on either side before seasoning them with salt, pepper, thyme, rosemary and paprika.

Thank you! I use to use whole clams in my recipe, but now use twice as many chopped clams. One, whole clams will explode when sauteing them. Two, the chopped clams stick to the linguine and you get a bunch in one bite.
