A sauce ā€œbreakingā€ is just the sauce separating into two components rather than being one cohesive liquid. Generally the fats or water will separate, giving you an oily mess rather than a typical sauce. Can be fixed by adding a bit more liquid if it isn’t completely broken though! A little water or even an ice cube can save a sauce from the brink!

Blend canned chipotle with jalapeno sauce (el pato green can) then mill/strain seeds. Mix with lime juice, cumin, paprika, garlic powder, onion powder, then sour cream. We make 5# sour cream to 1c of base. But play around with measurements to your liking. Greek yogurt would work fine as well.

Edit: Blend is more accurate than grind. Canned chipotles with Adobe sauce, not the dry ones
