Haggis is also pretty versatile as well.

I've had it the traditional style, with the peppercorn sauce, neeps and all.

I've also had it rolled in oats and baked as well.

There's always the possibility of it being used as stuffing for cornish hens too.

We made pave with duck fat at a place I used to work. Shit was money. Nice work. Might do up a pave for xmas this year.

You add a pinch to a cup of boiling liquid. Beer, milk, water, or whatever. Then add shredded/crumbled cheese a handful at a time. Now you have a smooth cheese sauce. Sodium citrate keeps the oil from separating out from the cheese. You can turn any cheese into a liquid
