Yum!! I lived with some turks, and every weekend they would invite other Turks over and we would do a big breakfast like this. It was always so fun and delicious. Seeing this brings back so many great memories!

I cover the bottom of the frying pan in veg oil (like a couple of cm), let it get nearly hot then crack the egg into it, as it’s cooking use a spatula to gently splash oil onto the top of the egg all around until it looks like that above! Only takes a min or two, not long. Hope this helps!
