Salt removes water from and dissolves some of the meat proteins, causing them to bind the insoluble proteins together. This spoils the tender texture of the beef.

I’ve made it with the zucchini- you can’t really notice it but it does help make the sauce creamier in my opinion

So don't drain the beef after browning?
What fat percentage are you using? 90/10?
