They do when there are rippling waves/eddies in the water. It caught me off as well since the water is drawn so smooth.

I think they were just making a joke/reference to the name being Nord, and how Nord VPN is a common sponsor in many online platforms.

Yes, it's just a combination of all the colors you can perceive. Only "real" colors that a human can see are blue, green and red. Everything else is some sort of a combination of those.
