I've had this sort of conversation about 'shortcuts' a lot. Before we were empty nesters we made bread in a breadmaker often, at least once a week. For challah we pull it out before it bakes to braid it and bake in the oven. "Purists" will go on & on about how they love the feel of kneading bread and would never use a breadmaker, but very few of them would make fresh bread every week!

Dumplings are similar, a fun rainy day project, but also great to pull out of the freezer whenever you're feeling the need. Sauce is also critical: soy, vinegar, simple syrup, microplaned garlic & ginger, and sesame oil.

The JC location dropped hare within like 1 month of opening. There are probably a few dudes with the skills to manage the unique pies, and/or the ability to care. And if you want a simple plain or pepperoni slice, there is no point in getting that from Toney Baloney's.

I don’t even know where to begin with how my food tasted. The most disappointment was the pasta. Figured you can’t mess that up but the texture was akin to reheating pasta in the microwave. Rubbery at the exposed parts and tender in others. I guess I could try again in a different season.

You got downvoted a bunch for this, but I have had some fantastic meals at Corto, yet also some absolutely terrible ones as well- consistency is a real issue there. We went on a holiday weekend in 2021, either July 4th or labor day, and it was like they just forgot the salt... in everything. Another time, we had the chocolate cake, and it appears they used fish sauce instead of whatever oil they typically used- it was... gross. Another time they hyped up a smoked pork dish, and I love bbq'ed pork, and it was extremely dry, it would have been better used to resole my shoes. Less extreme is that the chicken diablo or whatever the specific name is can go from "taco bell spicy" to "omg more water please ASAP".

On the other hand, when its on, its on, and is one of the best places in JC. The only others that rival are Ondo- which I am shocked has not blown up yet, the food, drinks and ambience are amazing, and its not even that expensive, and the new Madame was great the two times I went as well. Both are pushing the envelope to new places.

I tried the Hoboken one at least twice over the years, And the JC one twice within the first several months of opening. All occasions were mediocre at best. A bit undercooked more often than not. Not cheap either. That’s no cheap 2am drunk pie.

But I think most random pizza places in the area could outdo them.

Additionally, just because they have a following doesn’t mean anything. Most people don’t know what good food actually is. I’m not saying their pizza sucks, I’m saying it doesn’t deserve the hype.

Just because something gets attention doesn’t mean it is good. Omega watches have far superior technology compared to Rolex watches, but Rolex still gets the attention. You’re mad ignorant

I wouldn't hate on them that hard. I wanted to hate them so bad, but was genuinely surprised with the quality when they first opened in JC (expensive, but some unique things & great for something different as a treat). When that opening HQ crew left things dropped, and at that price point I don't risk lack of consistency. Anyone I know who has gone recently has declared them straight bad

I like Joe from Better Plastics in Jersey City. Despite the name the cabinets are not made of plastic, I don’t know where they got that name. Joe comes out to your kitchen to take measurements and take your opinions if you have any. Then he’ll propose a couple layouts as to where to put each component such as sink stove dishwasher fridge, etc. You pick between styles and colors of cabinets. They also do countertops but I’ve used countertop specialists for that.

I've seen a few folks recommend it, but I want to echo Bergen-Lafayette. I'm a youngish woman and often get street harassed if I'm walking alone near the JSQ PATH, but Bergen-Lafayette (from Liberty State Park over to Monticello) is quieter, new businesses are taking up shop alongside some charming established ones, and the neighbors are really kind. Listings Project, an email listserv, occasionally has roommate posts (though I think they're usually downtown). Plus, you get access to a big park for some outdoor space.
