My boyfriend and I stayed at the Hasbrouck House in Stone Ridge at the end of last year. Lovely town and lots of outdoorsy things to do in the area. I think the hotel offers day passes to the Mohonk preserve as well. It was about 2 hours from central Jersey and a very easy drive.

Gettysburg, PA for history stuff or the Finger Lakes in NY, which is the area from Ithaca to Rochester. Thats wine and hiking country.
