I know RockArt allows them inside and the 2 breweries by me allow them. Is that just a Stowe thing? Because I know Vermont allows them inside as long as strict protocol is met. ie: napkins / utensils etc are stored in closed cabinets.

We are getting 1.8 right now (Orange County) just started tapping (always start in Jan, 40k+ taps takes a long time)

BUT, the sap isn't the same. 1.2% sugar right now vs 2% in the spring means MUCH more energy intensive to get product from your sap.

Another thing is that the sap right now is SUPER low in sugar content. During usual sugaring season the sugar content of the sap is usually about 2%. Right now it's about 1.2%. That means that it takes nearly twice as much energy to boil the sap down. BUT, you are left with a lighter (both in color and taste) syrup.
For this reason you will see all but the largest producers holding off right now. The math just doesn't check out. Hell I have two of the biggest producers in state literally in my back yard and neither of them bothered to get going for this run. I think they are thinking of starting to tap just to be ready for what seems like it will be an early season.

From what I heard on the radio, folks are tapping but the sugar content is lower than normal so you'll need more sap to get syrup.

Well a simple google search also told me earth was flat but I know that’s not true because it contradicts others facts.
Like the fact that even the high desert states like Wyoming could contain more snow at a given time, not to mention mountain ranges….
So whatever that statement is based on is using some creative metrics.
Biggest one is the fact that eastern Snow doesn’t stick around nearly as late either…. There are literal glaciers out west that never melt, even in Nevada.

Literally addressed 0 of my arguments. My main point was that the things that cause ski resorts to be bad for the environment stem from larger problems such as fossil fuel and lack of public transport, and as such, ski resorts aren't inherently bad for the environment.
The problems with climate change cannot be solved by a few pieces of legislation on state levels as it would require a mass global effort to completely rework all infrastructure and global economic systems. And we all know that's not gonna happen.
Because of that I don't see the point of you bringing up ski resorts
