As a /r/symphonicmetal fan, I completely agree with this.
HD 6x0s are old headphones made for old music. Said music genre was pretty much nonexistent at the time the HD 600 was released (as are many other modern genres that you mention), so it's obvious they weren't designed with that in mind. I prefer a number of newer and less expensive headphones.
I don't have a problem with people enjoying their 6x0s, I just want this kind of pretentious posts to stop.

Consider getting something that is lighter on the head for your child. Those Sennheisers can be uncomfortably clampy even to some adults.

I recommend a Beyerdynamic DT headband. They fit perfectly on the round Hifimans, and Beyer products are known to last a long time.

In my opinion, they're overhyped. I have a pair, I used them exclusively for about a week after purchase but I find that they don't do anything better for me than my other (and cheaper) headphones, so now they're just sitting in my drawer as a spare.

It might be worth getting some more breathable earpads for this purpose (something like velour or perforated leather, as opposed to sealed leather). I'm in the same boat - I have the Audio-Technica ATH-M50xBT2, and the stock pleather pads get way too hot for me when doing any sort of activity with them on, so I'm looking for a replacement that will stay cooler.
Note that any alternate earpads will change the sound signature, and also noise cancellation performance in case of active noise cancelling headphones like the XM4.

Enjoy your cans, and don't worry about upgrades! The 560S can compete with stuff that's priced a tier or two higher, IMO.
DAC and amp don't matter much either, they're pretty easy to drive.

The HD 560S are open-back, so they aren't ideal for use on a train or plane. You (and other people around you) would probably prefer closed-back headphones for that.

The HD 560S are described as "Reference-grade headphones for analytical listening sessions" on the box, and as a HD 560S owner, I do think they're pretty good at it.

As someone who's only ever owned one Apple product (the wired dirty buds), it's really hard to tell which of those are fakes from the photos. The boxes are easier to tell than the headphones themselves.

You might like them better after a bit more getting used to the sound ("brain burn-in" as it's often called), but not necessarily. Contrary to popular belief, it is possible not to like the HD 600 (I'm one of those who don't).
