Spotify Premium is more expensive than Tidal HiFi at least where I live (€5.99/month vs. €4.99/month), so not much of a reason to stick with it.
Also FYI, Tidal pays more of that money out to artists/rightsholders.

I own about two dozen pairs of headphones mostly in the $150-$300 price range, and if I could keep only one pair, that would be... ATH-M50x, no joke. As much as I love the sound of higher-end and open-back headphones, I haven't found any other wired headphone that is as good when it comes to convenience - closed-back with great sound isolation, easy to drive, good build quality, foldable, uses detachable cables, and comfortable enough for long listening sessions.

I feel similarly about the HD 600s. They're good headphones for music I don't listen to and not so good for music I do listen to (mostly /r/symphonicmetal), so now they're sitting in my drawer as a backup pair most of the time.
Maybe try EQ as the other commenter suggested. If you still don't like the 600s after applying EQ, or can't/don't want to use EQ for some reason, I think it's best to return them.

The best I can do for $200 is Sennheiser HD 560S (preferably a pre-2022 revision pair, I haven't heard the 2022 revision but I'm reading bad things about it).
Music? Cryovile and Cecile Monique in lossless, of course.

I find EQ to be a lot of work for very minor improvements. It's not as convenient as plug-and-play, and I also don't see the point in EQ-ing a headphone to a completely different tonality from stock (because if that's what you want, then you might as well, y'know, get a different headphone). I still fiddle with EQ from time to time but I won't buy a headphone that doesn't sound good enough without EQ to me.

I recently bought a pair of HD 559 earpads (part 572287) and a pair of HD 599 earpads (part 572273), and took the stock pads from a barely used pair of HD 560S (pre-2022 revision) for comparison. The 559 pads are identical to the 560S pads, and the 599 pads are the same in brown colour.
It's possible that the difference you're hearing is merely due to pad wear, but it's also possible that you have pads from two different batches/revisions, or a pair of genuine pads and a pair of knock-off pads. Are there any visual differences between the two pairs of pads?

I did the unimaginable.
I tried the HD 600 before I did the HD 560S. I was disappointed in the former (but eventually bought a pair anyway, because reasons), and loved the latter. A few months of owning both and I haven't changed my mind.

HD 560S and AKG K612 Pro, for example. I'd say it's because the HD 6x0 series have poor bass and treble extension, and the music I listen to (example) has a substantial amount of content on both ends.

Except Spotify Premium is actually more expensive than Tidal HiFi (€5.99/month vs. €4.99/month here in Croatia), so even if you don't hear the difference, there is not much to lose by making the switch.
